One of my favorite ways to add some flavor to chicken breast is lemon. I’m sure there are much better recipes, but usually I’m cooking for one and I need a quick and easy recipe. Here is my version of the Lemon Pepper Chicken dinner.
1 lb fresh chicken breast strips
3 small lemons
1/2 tbsp Lemon & Pepper Grinder (or lemon zest with fresh ground pepper)
1 tbsp Extra Virgin Olive oil
Slice three lemons and extract the juice. I use this handy dandy IKEA SPRITTA Citrus Squeezer Strainer Juice Container. I recommend getting one of these if you need to squeeze juice from lemons, limes, oranges, grapefruit and any other citrus fruits. It’s convenient because it keeps the seeds out of the juice.
Pour the lemon juice in a bowl and add the Lemon & Pepper Grinder mixture. Give it a stir and then get ready to add the chicken.
Marinate the chicken in the mixture and place in the fridge until ready to use. I was immediately using this, so it only marinated for about 5 minutes and was still very flavorful.
Add the extra virgin olive oil to the pan and let heat for 1-2 minutes. Make sure entire pan is oiled and then add the chicken.
When the chicken tenders start to cook all the way through, flip them over. You can add a little of the lemon juice mixture for a boost of lemon flavor. Cook thoroughly for 3-5 minutes each side or until lightly browned.
Serve this lemony chicken immediately with mixed vegetables and mashed potatoes or any other side dishes you prefer. Enjoy!
