I decided to try a cupcake with an Organic Country Choice sandwich cookie. Kind of like and Oreo, but made with better ingredients.
I started by making the cupcake batter and putting a tiny bit at the bottom of the cupcake tins. Then I pressed a cookie into each tin. I scooped another spoonful of the batter and put it on top of the cookies. I baked for 20 minutes and let cool for 10.
I had the great idea to make icing with crushed up cookies. I added melted butter and a couple tablespoons of milk with a cup of powdered sugar. The texture was a bit off, so next time I’ll use the food processor for the icing.
They were pretty gooey because I added Greek yogurt to make them moist, but overall they were pretty delicious. Kind of tastes like an Oreo pancake!
