I decided to whip up something new for dinner and used the ingredients that I had on hand. Since I have a TON of pasta in my pantry, I wanted to make a pasta dish without the traditional tomato sauce. I decided to use these ingredients to be a healthier option with high protein and fiber. This recipe is for one single serving, but you can double as many times as you need to feed your family.
1/4 pound 92% Fat Lean Ground Beef
1/2 cup Whole Wheat Rotini Pasta (or any pasta you prefer)
1 cup Fresh (or frozen) Baby Spinach Leaves
1/8 cup Shredded Mozzarella Cheese (or more if desired)
1/2 tbsp. Extra Virgin Olive Oil
1/2 tsp. Cumin
Pinch of Salt and Pepper
1/2 tsp. Cilantro Leaves (optional)
Bring 3 cups of water to a boil and add pasta, spinach and cilantro. Bring skillet to medium heat and add beef until browned and no pink. Add salt, pepper, olive oil and cumin to the beef and stir. Set aside until pasta is fully cooked. Once pasta and spinach are fully cooked, strain and add to beef mixture. Serve the dish in a bowl or plate then add cheese on top. Enjoy!
